Fugu is a pufferfish that can be poisonous to people due to its tetrodotoxin, a poison stronger than cyanide.

Toxic parts of the fish must be removed in order to avoid contamination of its meat.

The restaurant preparation of the fugu is strictly controlled by law in Japan and only certified chefs, after several years of rigorous training, are allowed to prepare the fugu dish.
